Craving baked apples

Well, I did manage to use up the last 5 apples that were still chilling out in my crisper drawer. Nothing as fancy as the cinnamon apple cake squares I made the other day, but still a yummy use for apples.

I cut the rest of them up and baked them with ground cinnamon, ginger, clove, nutmeg, and a little sprinkle of sugar. I’ve been using them over the weekend to top my breakfasts with.

I’ve eaten something appley like this every day for a week now and I’m still not tiring of it!

Here’s how easy it is to make baked apples:

A simple method for baking apples to use on top of oatmeal, yogurt, ice cream, anything!

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Ingredients

  • Any number of apples you need to use up
  • as much cinnamon as desired
  • pinch of clove, ground ginger, and nutmeg
  • sprinkle of sugar
  • squeeze of lemon juice

Cooking Directions

  1. Peel, core, and dice apples.
  2. Add to a baking dish where they will be piled upon each other (to encourage steaming)
  3. Add spices to taste and squeeze over lemon juice. Sprinkle on sugar.
  4. Mix with a spoon and bake at 400 degrees for 40 minutes, stirring once or twice throughout.

And another example of using up what’s in the crisper…pizza! I had 2 lonely button mushrooms and a tomato that was getting squishy and needed to be used up. So, mushroom and fresh tomato pizza!

I always by whole wheat pizza dough from our local farmer’s market and roll it out myself. The first time I bought it I was a little bit intimidated, but now I make pizza like an old pro!

My favorite trick to getting it tasting like a brick oven pizza is to use a pizza stone and put it under the broiler. The edges get that slight charred flavor and the cheese goes all brown and bubbly.

Also this past weekend…a double rainbow!

Decatur experienced a light sunshower on Saturday that produced a vibrant rainbow arching completely across the sky. And if you looked closely you could see another fainter rainbow gleaming above it. Everyone in town just stopped in their tracks to gape at it and snap photos.

We saw it on the way to Leon’s for dinner with some friends. Leon’s has recently changed their menu a bit and several of the things that Jeff and I order regularly are gone. :( It was ok though, we got to try some new and interesting things because of it.

It was so good slathered on fresh bread studded with the tiny grains of mustard and a glazing of orange marmalade on top. Lamby!

I got a really cool new cocktail called The Wasp. It’s rye whiskey and peach honey and some other stuff I don’t remember, but man it was delicious!

I ordered the new side wedge salad with crispy bacon, hard boiled egg, radish slices, and creamy caper dressing. Pretty good, a nice take on the classic.

And the zucchini casserole with onion jam and salted lemony arugula. I get one of these almost every time we go because it’s just so good.

It wasn’t quite enough food so I ate about half of Jeff’s fries with garlic aioli. :)

End of the week eats

Thanks so much for everyone that had nice things to say about my new haircut. I didn’t mean to be negative, but sometimes it just feels so good to whine! :) I’m sure you know what i’m talking about. I’m glad that I let my emotions about it out so that now I can really move on. (BTW, I’ve had the chance to style it myself a few times now and while I still don’t love it, I can deal with it until it grows out.)

Yesterday I had a very green lunch. Another salad, this time with creamy avocado, and a side of yet more avocado smashed on sprouted toast with seaweed flake. It occurred to me recently that maybe not everyone is sprinkling seaweed flake on everything like I do, so I think soon I’ll need to do a post on this stuff to extol its virtues, cuz it really is a wonderful and delicious thang.

Last night’s dinner was incredible.

I made a spicy pineapple pork dish over jasmine rice. This was kind of half-way between sweet and sour pork and some sort of Hawaiian dish. Jeff and I both swoon for hot pineapple, so this was much enjoyed by both parties.

I made it by first adding some sesame oil and red pepper flakes to a wok (pan is fine) and then sauteing the red peppers in the spicy oil. When those were half-way cooked, I added the pork pieces and let them brown on both sides. Then, in went the pineapple cubes and chopped scallions. To make it a little bit saucy, I crushed some of the hot pineapple pieces with the back of a spoon, then added a swish or two of fish sauce and rice vinegar. The whole thing got a small sprinkle of salt and black pepper and was done!

It takes more time for the rice cooker to finish making fluffy rice than it does to make that dish. Super easy.

This morning, I thought that I would be really clever and make green tea and blueberry pancakes for breakfast…

As usual though, any time that I think I’m being really clever with a recipe it kind of fails. While these were totally delicious and filling, I couldn’t really taste the green tea at all. I’ll try ’em again sometime and up the matcha addition quite a bit.

This afternoon was gorgeous out. 85 degrees but breezy, can’t argue with that! We took the open morning to start house-hunting in the area. We are not on track to buy for at least another year, but we’d like for our next rental to either be a single-family home all to ourselves or a nice condo really close to or in downtown Decatur, so that we can enjoy this town to it’s fullest.

After an hour or so of driving around and writing down numbers to call for rentals, we parked the car at home and walked into town for a relaxing afternoon beer break.

(Love that thermos!) We parked ourselves at the bar in Leon’s and spent some time drinking good beer and talking about the next few things we need to do to make RipeTrack better. SO much work left to do, but all worth it.

This weekend has felt long, and for that I can’t complain.

This next week is going to be tremendously busy. My brother-in-law’s wedding is Saturday so I’ll be baking and decorating the wedding cake for he and his fiance from Tuesday on. Yeah, it takes several days to put a wedding cake together, yeesh. I cannot wait to show you guys my mad cake-baking skillz!

Tour Decatur 5k, 2011

I did it again. I beat my previous time of 37:38!

I am so proud of how it all went down today. Here’s the details…

I got up before Jeff this morning and did some quick rinsing off in the shower before grabbing breakfast and chugging a bottle of water. Jeff joined me shortly thereafter and we got ready at a leisurely pace.

The original plan was to walk to the starting line from home today, but because we had rain in the forecast, we decided to drive instead. Because we were planning to drive instead of walk, I figured we could leave at ten til 9 and be there by 9am, just enough time to grab my race number and line up for the start at 9:15. Well…I forgot that there was a “tot trot” type race going on before the 5k for Moms with strollers and young children, so the roads we were planning to take were blocked off already. We could not figure out where to park so Jeff ended up dropping me off behind the high school just after 9am while he went to look for parking.

The email I got for the event said to meet in the football stadium, but after sorting through the crowds and asking around, no one seemed to know where packet pick-up was, I guess they all got theirs the day before like I meant to. I finally found it inside the school lobby and got my number just in time.

As we lined up for the race I still didn’t see Jeff anywhere. It was probably 10 minutes before he made it to where I was at the starting line.

I pawned off my jacket on him and wiggled into the group somewhere in the middle.

Most of the hills in this course were in the first mile, and I told myself that if I thought I needed to that I could allow myself to walk those first hills so as not to wear myself out too early. I was feelin’ good though so I trudged right up them with little extra effort.

I still haven’t been able to run a solid no-walking 5k distance in training runs yet, my lungs don’t seem to be getting stronger as fast as my legs are, but today I nearly ran the entire thing! I stopped for water only to find out they were out, and I walked up part of the very last hill so that I would have the energy to sprint to the finish, but that was really it!

The soft bouncy astroturf of the high school football stadium felt so good as I bolted to the finish line. I flashed Jeff a peace sign as I passed him!

I wasn’t nearly as tired after this race as I was for my first 5k. I sure was hungry though!

Decatur’s outdoor farmer’s market was set up near by so we stopped in for the second half of our breakfasts for today. There is an awesome stand with fresh pastries and coffee that we stopped at.

I got a baked donut with salted caramel frosting, and Jeff grabbed a sausage biscuit. Both were spectacular!

Anyway, we made the walk back to the car which Jeff had to park pretty far away. The clouds were getting darker and darker and the thunder was starting to make a fuss. As soon as we got home the rain started coming down, that was my cue to take a nap! I crashed out for an hour or so with Jeff on his computer at the end of the couch and both kittens snorgling my butt. It was pure heaven.

All I wanted for lunch was eggs. I made avocado toast with a fried egg on top and ate it with some tomato soup.

The rest of the day will be spent in my pajamas, I’ve earned it!
