I like vegan cheese?!?!

In an effort to cut out a bit more dairy from my diet, I decided to try out a product that I’ve heard about all over the blog world:  Daiya, which is a vegan cheese substitute.

I gotta tell ya, the words “cheese substitute” make my spine tingle.  Nevertheless, I gave the mozzarella style a go in one of my favorite preparations, the grilled cheese sammich.

The grilled cheese has become my go-to dinner for nights that I either don’t have anything planned to make, or just can’t make myself cook anything.  It’s a versatile dinner as you can add any number of vegetables and/or condiments and make a unique and tasty sandwich tailored to your cravings for that evening.  Paired with a salad or soup, and it’s no less impressive than something you spent an hour cooking.

I tried my first vegan grilled “cheese” with just a smear of apple butter, one of my favorite simple combinations.

I was a little put off by the smell of the “cheese” in it’s packaging.  It was kind of salty and acidic; reminded me of parmesan but not in a good way, kind of like a half-melted and wet hunk of parmesan.

It was a little unpleasant to the touch; a bit wet, slightly oily.  The strands separated from each other better than real cheese though, which made it easy to sprinkle on the sandwich evenly.

I prepared the sandwich in my usual manner; non-stick olive oil spray in the pan, press the sandwiches while cooking with a heavier pan weighting them down, flip once and done.

The Daiya passed the first test in that it melted well and held the bread together as well as regular cheese.

The real test is taste though, right?

I gotta say, I was astounded at how good this is.  If I was served that sandwich and no one told me the cheese was vegan, I wouldn’t have thought anything was different about it. It is a little creamier than regular cheese, but not Velveeta creamy, so it doesn’t come off as one of those oily processed cheese products. And the ingredient list doesn’t have a single thing on it that I’ve never heard of or should be wary of.

I am thrilled that I can use this product to replace some of the dairy in my diet without sacrificing any of the pleasure in my beloved grilled cheese. I never intend to eliminate dairy entirely, but I want to treat it as more of a junk food and really save it as something to eat only at restaurants or on special occasions.

Epic pumpkin oats and veggie sandwich

This morning I really wanted to use my pumpkin puree that I made yesterday, so I made a batch of pumpkin oatmeal for Jeff and I with a few extra additions.

Yes, that’s a caramelized banana and apple butter!  Wow, this was so good.  Here’s how it came to be:

I started by slitting a banana in half and heating it in a non-stick pan…

And in a pot I added the following:

  • 3/4 cup rolled oats
  • 1 cup almond milk
  • 1/4 cup water
  • 1 tbsp. flax meal
  • 1 tbsp. chia seeds
  • 1 tbsp. maple syrup
  • one huge scoop of pumpkin puree

I basically just let the liquid come to a boil then add all the stuff, stir, turn it to low and let it sit covered for about 5 minutes.  Then I just stir vigorously until it thickens up nicely and serve.

Add the toppings…

And serve! Just look at the “veins” on that caramelized banana, creepy but epically good!

Moving on to my equally epic lunch…

Jeff and I went for a walk to enjoy the glorious day going on outside and to try to grab some lunch.  We ended up at Sawicki’s, a sort of general store/ delicatessen/ sandwich shop in downtown Decatur.  While we waited for our sandwiches to be made, Jeff sipped on a cream soda and I tried a chilled rooibos tea.

And we shared some sweet potato chips…

Jeff got the cuban, which he said was excellent…

And I had the single best veggie sandwich I have ever had…

It was spring mix lettuces, avocado, cucumber, artichoke, tomato, hummus, and basil caper vinaigrette on the most delicious crusty roll ever.  EPIC.

We will definitely be hitting up Sawicki’s again, can’t believe it took us this long to try it.

I have an interesting dinner planned for tonight, maybe I’ll hit the trifecta?

P.S.: Yes, I still plan to put up a video of my wedding cake practice, “life stuff” has gotten in the way, but it does exist and I do intend to get it on here soon.

A lackluster sammich

Here’s a look at my lunch from earlier.

I have to say that I was quite disappointed at this sandwich.  It was full of things I love; avocado, smashed black beans, sprouts, spinach, seaweed flake, and a curried chickpea salad; but was just so super bland.  It really needed something juicy in it like a nice ripe tomato or a roasted red pepper.

This was excellent though…

A bright sunny orange, yum!

Well, lunch may have been lackluster, but tonights’ dinner is a real show-stopper!  Can’t wait to show you one of my very favorite meals and talk a little about my style of cooking and the kind of food that I really enjoy eating!
